How to cookmushroom congee

Wash the rice couple of times. For the best congee: mix the rinsed rice with oil and salt before cooking in boiling water. This make the rice broke down really quickly.

Bring water to boil and add rice in it. Then turn it I simmer. Cook gently, stirring occasionally, until the rice is cooked becoming thick and creamy.

Wash and clean your mushroom

Heat up oil in the pan

Add mushroom in it. Sautéed it over medium heat and at the very end, drizzle then with soy sauce.

Add mushroom into the boiling rice

Continue to simmer until the broth thicken like porridge. Add salt, pepper, and fish sauce in it. Remember to pick up the scum.

Serve immediately. Add crushed peanut and fried garlic in it.
